Nina makes a simple, quick and fun guacamole for a snack anytime of day or night. I prefer using only the freshest of ingredients; if, however a fresh lemon isn't available, you should just go ahead and just a bottled lemon juice. Lemon juice or lime helps to retain and brighten the beautiful green color. Color and texture are important in our foods. Avoid making a mushy mess. Most times, guacamole is best with a little texture. Mash with the back of a spoon or a fork. Add tomatoes once you've mashed avocado. If you have any questions, please ask anytime! 2 large avocado tomatoesYou will need: 2 large avocados 1 tsp minced garlic 2 tablespoons diced onion 1/4 cup diced tomato cilantro (optional) lemon juice (to prevent discoloration) to taste: black pepper & salt I have found this guilt-free; I don't add any extra oils or fat...no mayo, no cream... Our children will literally lick the bowls clean (if we we're watching). Try this with Tortilla chips warmed in the oven for a few minutes. This helps bring the "homemade" old fashioned taste to store bought chips. You want a nice sturdy chip.
